Three things: ingredients, time, and care. We use just flour, water, and salt — no commercial yeast, no dough conditioners, no preservatives. Our dough is slow-fermented for 18-24 hours, which develops complex flavor and makes the bread easier to digest. And every loaf is hand-shaped and baked in small batches.

Our Classic Sourdough, Everything Sourdough, and Rosemary Sea Salt are all vegan — just flour, water, and salt. Our Jalapeño Cheddar contains cheese, and our Cinnamon Raisin and Apple Cinnamon loaves are also vegan-friendly. Check each product description for details.

No, our bread is made with wheat flour and contains gluten. However, the long fermentation process (18-24 hours) naturally breaks down some of the gluten, which can make it easier to digest for some people with mild sensitivities. If you have celiac disease or severe gluten intolerance, our bread is not suitable.

Each loaf is approximately 1.5 pounds and yields about 12-16 slices, depending on how thick you cut them. One loaf typically lasts a family of four about 2-3 days — if you can resist eating it all in one sitting!

For the best texture, store your bread cut-side down on a cutting board at room temperature for up to 3 days. Do not refrigerate — it will dry out the bread. For longer storage, slice the loaf and freeze it in a sealed bag. See our full bread care guide.

Absolutely! Sourdough freezes beautifully. Slice the loaf first, then freeze in a sealed plastic bag or container. Toast slices directly from frozen — no need to thaw. Properly frozen, your bread will stay fresh for up to 3 months.

The best way to revive sourdough is to run the crust under cold water, then place it in a 350°F oven for 5-10 minutes. The water creates steam that re-crisps the crust and softens the interior. It's almost like fresh-baked! More tips here.

Flour, water, and salt. That's it. No commercial yeast, no sugar, no oil, no preservatives. Our sourdough starter (a natural culture of wild yeast and bacteria) is what makes the bread rise and gives it that signature tang. Everything else is time and patience.

We source our flour from local mills whenever possible. We believe that great bread starts with great grain, and we're committed to supporting regional agriculture. Our flour is unbleached, unbromated, and full of the character that industrial flours lack.
